Abstract:
The purpose of this study is to investigate the effect of storage conditions on the function of Toona sinensis by studying the changes of antioxidant activity of phenolics. DPPH assay and ferric reducing antioxidant power(FRAP) were used to evaluate the changes of antioxidant activity during the storage at 0, 5 and 10 ℃. The content of various phenolic compounds was detected by HPLC. The antioxidant activity of phenolics in T. sinensis stored at 0, 5 and 10 ℃ reached the highest value at the 4th day and the change could be connected with the changes of three kinds of phenolics in it. So the antioxidant activity of phenolics is affected by both storage temperature and time, and mainly decided by the changes of phenolics in T. sinensis.
